Sunday is Fathers Day, Sunday is Roast Lamb

Tomorrow is Father's day in Australia & because I am married to a home body & he's not too fussed about Father's day we're staying put, but I am going to make him his favourite dishes with "help" from the kids.

I'll do a slow roasted leg of lamb, or in this case half a leg.

You will need:

1 leg or shoulder of lamb or 1-2 kg of gravy lamb

5 cloves of garlic, peeled & squashed

1 preserved Lemon

2 Tbsp of Olive Oil

2 tsps of ground cumin

pinch of saffron

3/4 cup water

What to do

Preheat your oven to 150 degrees celcius and put all the ingredients into a casserole dish with a snug fitting lid. Make sure that you rinse the preserved lemon and break it into pieces, Put the casserole into the oven and cook for at least 3 hours depending on how much lamb you have and how many people you're serving.

This recipe will serve at least 4 people.

We serve it with Salad and crusty bread.

I am also going to make a chick pea salad & a pavlova for dessert.
